Abstract:	專業證照為技職教育之重要特色，各項證照皆以專業技能為設計理念，學生擁有專業證照應擁有較佳專業能力表現。為了探索專業證照與專業表現的實際成效及因果關係，本研究借由調查學生校外實習之專業能力表現及擁有中餐烹調、西餐烹調、烘焙、調酒及餐旅服務技術士證照等進行比對，試圖瞭解專業證照與專業表現之因果與相關性，並借以探究餐旅教學實務上專業證照培訓的效益與影響，以做為教學實務之重要參考。利用群集分析，本研究發現於實習表現較為優秀學生中，各項專業證照擁有的比例，均一致呈現以少量差距高於較表現不佳同學群組的情形。統計結果顯示學生專業證照擁有情形與專業能力表現具有不顯著的相關性。統計並顯示愈近期取得專業證照的學生工作熱忱愈佳，而取得專業證照愈久之學生，工作計劃及工作紀律愈佳。證明專業認證對於學生中長期之專業表現具有一定之影響。本研究結果亦呈現不同之專業證照項目及取得時程，對於學生專業表現及專業態度分別之影響。並討論相關持續研究之課題，供餐旅企業及學校課程設計之中長期策略參考。 This project draws up to carry on a meal to travel in common use professional license function analysis, by with ratio to the professional license and the employment working talent of to should relate to. Also launch a student from practice in our school to carry on each employment unit in the meantime trainee and the questionnaire of graduate student profession performance and license index sign, by compare after obtaining condition and career performance analyze to the employee related license each job grows employee for license training short, medium, long term of development influence, the research meal trip service industry license approbation and training efficiency. By with the industry approbation of preliminary study dining professional license with physically train efficiency index sign, become a meal trip enterprise and talented person in the school training in long term strategy it draw up a reference.
