Title: 幾丁質類物質對環境病原菌的抑菌作用

Abstract: 本研究乃以去乙醯程度90%、分子量60KD之幾丁聚醣及羧甲基程度98%以上、分子量1500KD之蝦、魷魚羧甲基幾丁聚醣抑菌成分,針對7株環境中常見之病原菌臘色桿菌(Bacillus cereus)、金黃色葡萄球菌(Staphylococcus aureus)、產氣腸桿菌(Enterobacter aerogenes)、大腸桿菌(Escherichia coli)、綠膿桿菌(Pseudomonas aeruginosa)、惡臭假單胞菌(Pseudomonas putida)、豬霍亂沙門氏菌(Salmonella choleraeesuis)進行抑菌研究,期望能夠開發出天然抗菌劑。實驗結果:蘋果酸濃度在100ppm以內,並沒有抑菌效果;當幾丁聚醣濃度為900ppm時,除了對產氣腸桿菌沒有抑菌作用外,對其他6株菌的抑菌率都可達99%以上;然而,蝦-羧甲基幾丁聚醣僅對惡臭假單胞菌有抑菌效果,魷魚-羧甲基幾丁聚醣僅對臘色桿菌有抑菌效果。幾丁聚醣對金黃色葡萄球菌及惡臭假單胞菌的最低抑菌濃度為4.5ppm,臘色桿菌、大腸桿菌及綠膿桿菌的最低抑菌濃度為45ppm,而豬霍亂沙門氏菌的最低抑菌濃度為90ppm。
