| Abstract: | 本實驗探討產細菌素菌株Leu. dextranicum L1/6所生產之細菌素L1/6之pH安定性、熱安定性及酵素安定性與抑菌範圍。細菌素L/1/6在pH2~8時具有抑菌活性，對熱安定性，尤其在低pH時，具有較好的抑菌活性及耐熱性，對prozyme E3，pepsin，papain，chymotrypsin A,trypsin，pronase E等蛋白質分解酵素敏感，可抑制一些食品病原菌及食品腐敗菌如Listeria monocytogenes，Aeromonas faecalis，Pseudomonas，Shigella等菌。 |
