Abstract: 本實驗探討產細菌素菌株Leu. dextranicum L1/6所生產之細菌素L1/6之pH安定性、熱安定性及酵素安定性與抑菌範圍。細菌素L/1/6在pH2~8時具有抑菌活性,對熱安定性,尤其在低pH時,具有較好的抑菌活性及耐熱性,對prozyme E3,pepsin,papain,chymotrypsin A,trypsin,pronase E等蛋白質分解酵素敏感,可抑制一些食品病原菌及食品腐敗菌如Listeria monocytogenes,Aeromonas faecalis,Pseudomonas,Shigella等菌。
