摘要: 「在地食材,健康實在」基隆好山好水,常年不缺水,歷來有雨都之稱,不僅擁有豐富海洋資源,且充沛的雨水孕育了人間美味的蔬果與山產。要有健康的身體需從健康的飲食來規劃,隨著社會的變遷,人們生活忙碌,外食人口逐漸增加,導致營養失衡,疾病也隨之而來。
本研究菜單設計採以基隆不分地區性,充分運用在地食材,以健康、少油、少糖、少鹽、沒味精的健康理念調理食物,呈獻自然原味,研發特色健康餐盒,達到營養均衡、色香味俱全之飲食,以促進身體健康為目的。
本研究為探討在地食材,針對基隆農產品與漁產品為主要食材,設計烹調特色健康餐盒,採用感官品評法,聘請農業界、漁業界、廚藝界及營養界四者不同領域之專家業者各三位,組成感官品評小組。
本研究研發特色健康餐盒有三種,分別為:桂妃醉雞餐盒、紅梅鎖管餐盒及樹梅一夜干餐盒等。經專家依感官品評法選出最適配的餐盒組合:主菜樹梅一夜干,主食糙米飯,配菜海藻黃瓜、百香山藥、桂竹筍清燉豬腱,再由80位消費者之感官品評,喜好性及接受性統計分析。
本研究可提供政府相關單位及餐旅觀光業者作參考,希望業者能為一般消費者的健康飲食之理念,而製作特色健康餐盒,推廣基隆在地食材,帶動地方繁榮。“Local food, healthy and practical”. Keelung, a place with good mountains and good water as well as perennial water, which has been called The City of Rain, not only has rich marine resources, but the abundant rain achieves the production of delicious vegetables and fruits. If you want to have a healthy body, you have to start from a healthy diet plan. With the change of the society structure, people are living in busy lives and those eat out are gradually increasing, which brings about nutrient unbalance and diseases.
The menu design of this research makes use of Keelung's local materials to cook food with the health concept of health, less fat, sugar, salt with no MSG, presenting the natural and original taste and developing special healthy meal boxes to achieve nutrients balance and delicious meal to promote body health.
This research is to explore local food, giving priority to Keelung's agricultural and fishery products, design special healthy meal boxes, use sensory evaluation method, and constitute a sensory evaluation team of three experts in eachof the four areas: agricultural, fishery, cooking and nutrient industries.
There are three special healthy meal boxes developed in this research: Concubine Wined Chicken Meal Box, PlumSquid Meal Box, and Tree berry Dry-Overnight(Mackerel fish)Meal Box, etc. The experts selected by the sensory evaluation method the most suitable for combinating the meal box: main course is tree berry dry-overnight-major grain is brown rices and side dishes are seaweed cucumber-granadilla yam and stewed pork hocks with bamboo shoots and then 80 consumers by sensory evaluation the degree of preference and acceptance of statistical analysis.
This study may provide the relevant government units and hospitality tourism industry as a reference, and hope the industry can produce characteristics healthy meal boxes for the concept of the average consumers’healthy diets. Promote Keelung local food ingredients to promote its prosperity.
