Title: 市售巧克力、巧克力餅乾及餅乾產品價格與飽和脂肪及反式脂肪含量關係

Abstract: 本研究調查巧克力、巧克力餅乾及餅乾三類產品的飽和脂肪與反式脂肪含量以及與其價格關係。抽樣範圍自 2014 年 10 月到 2015 年 3 月,針對台北地區便利商店、超市、大賣場等地販售之共 204 件國產及進口巧克力、巧克力餅乾及餅乾產品。脂肪含量資訊取自產品營養標示,價格記錄自貨架上標示。根據台灣法規規範,反式脂肪含量占產品重量百分之零點三以下得標示為零。然而,在國產及進口的巧克力、巧克力餅乾及餅乾產品中,分別 23 件有 4 件及 51 件有 3 件,30 件有 11 件及 30 件有 5 件,以及 33 件有0 件及 37 件有 2 件反式脂肪含量標示不是零。國產巧克力產品總脂肪中的飽和脂肪及總脂肪中的反式脂肪呈現負相關,相關係數為﹣0.465 (p<0.05)。國產巧克力產品反式脂肪含量低者其飽和脂肪含量相對就會偏高。國產及進口的巧克力及巧克力餅乾產品價格平均值有差異,t 值分別是﹣2.50 (p=0.015)及﹣2.87 ( p=0.006)。國產巧克力產品中飽和脂肪及反式脂肪總和與價格呈現負相關,相關係數為﹣0.478 (p<0.05)。國產的巧克力產品可能含較高的飽和脂肪及反式脂肪導致價格偏低。在意價格的消費者購買國產巧克力產品時須多注意產品營養標示中的飽和脂肪及反式脂肪含量。
This survey was conducted to assess the levels of trans and saturated fats and their relationship with price in three food categories: chocolate, chocolate cookies and cookies. A sampling of total 204 local and imported products was conducted at convenient stores, supermarkets and malls in Taipei metropolitan area from October 2014 to March 2015. The fat content information was obtained from nutrition fact panel on product, the price was recorded from the listing on product shelf. According to Taiwan’s regulation, it can be labeled as zero when the percentage of trans fat in product below 0.3%. However, 4 of 23 and 3 of 51 of chocolate, 11 of 30 and 5 of 30 of chocolate cookies, and 0 of 33 and 2 of 37 of cookies from local and imported products, respectively are not labeled as zero. Inverse correlation of the trans fat in total fat and the saturated fat in total fat was found from local products of chocolate (r =﹣0.465, p<0.05). Products that are lower in trans fat may be higher in saturated fat of local chocolate. The average prices of chocolate and chocolate cookies have difference between local and imported products with t =﹣2.50 (p=0.015) and t =﹣2.87 (p=0.006), respectively. Inverse correlation of the trans fat and saturated fat in total fat and price was also found from local products of chocolate (r =﹣0.478, p<0.05). The higher content of trans and saturated fat seems to lead to the lower price of the local chocolate products. Price-conscious consumers need to pay more attention of trans fat and saturated fat content on Nutrition Fact panel to local chocolate products.
