摘要: 本研究旨在探究基隆市國小學童家長對低碳飲食認知、行為及應用於學校午餐之態度。研究採用問卷調查法,以分層隨機方式抽取基隆市九所國小學童家長為受試者,總共發出問卷540份,有效回收482份,有效樣本回收率為89.3%。研究工具以本研究修訂編製之「低碳飲食認知量表」、「低碳飲食行為量表」、「低碳飲食概念應用在學校午餐之態度量表」。採用描述性統計分析、t檢定、單因子變異數分析、Pearson積差相關等統計方法進行資料分析。研究結果如下:
一、基隆市學童家長在低碳飲食認知及行為上有中上水準的表現,對低碳的學校午餐也有中高程度的支持態度。
二、基隆市學童家長的低碳飲食認知會受到學歷、職業、月收入、子女就讀學校規模、每月可接受的低碳學校午餐餐費調高範圍而影響。
三、基隆市學童家長的低碳飲食行為會受到學歷、職業、每日外食頻率、子女就讀學校規模而影響。
四、基隆市學童家長對低碳學校午餐的支持態度受到學歷、職業、平均月收入而影響。
五、基隆市學童家長在低碳飲食認知、低碳飲食行為及對低碳學校午餐之態度三者間呈現兩兩正相關的關係。
根據研究結果發現,基隆學童家長對海鮮及米麵食的選擇仍難以考量低碳飲食原則,且對低碳學校午餐的態度,不會因為性別而有差異;家長對學校午餐的要求已不僅是衛生安全與健康,而是更進一步要求食材的選擇學校午餐也低碳又環保。
This research explored elementary school parents’ cognition and behavior of low-carbon diet and their attitude towards the application of low-carbon diet to school lunch. The research adopted questionnaire and stratified cluster sampling methods. The participants included parents from nine elementary schools in Keelung. 540 questionnaires were issued and 482 were returned. The recovery rate was 89.3%. The research instruments included Scale of Cognition of Low-carbon Diet and Scale of Behavior of Low-carbon Diet and Scale of Attitude towards the Application of Low-Carbon Diet to School Lunch. All three scales were formulated by the researcher. Results of descriptive statistical analysis, T-test, one-way analysis of variance(ANOVA) and pearson product-moment correlation showed:
1.The participants performed better than average on cognition and behavior of low-carbon diet and on attitude towards the application of low-carbon diet on school lunch.
2.Participants’ cognition of low-carbon diet was influenced by their education, occupation, monthly income, the scale of the elementary school, and the range of acceptable monthly low-carbon lunch fee.
3.Participants’ behavior of low-carbon diet was impacted by their education, occupation, daily eating-out frequency and the scale of the elementary school.
4.Participants’ attitude towards the application of low-carbon diet was affected by their education, occupation, and monthly income.
5.A significant positive correlation existed between any two of participants’ cognition of low-carbon diet, behavior of low-carbon diet and attitude towards the application of low-carbon diet to school lunch.
The research also found: in regard to the selection of seafood and grains, the participants tended to put aside the low-carbon diet principles; there was no gender difference in the attitude towards the application of low-carbon diet to school lunch; for school lunch, parents demanded low-carbon and environment-friendly materials in addition to hygienic and healthy lunch.
