题名: 市售巧克力、巧克力餅乾及餅乾產品反式脂肪含量之調查

摘要: 自2009年6 月到2010年3 月,針對便利商店、量販賣場、超市等地販售之158 件巧克力、巧克力餅乾及餅乾,調查產品中反式脂肪及飽和脂肪之含量及關係。台灣市售包裝食品營養標示規範規定產品中反式脂肪含量低於百分之零點三得標示為零。在所調查的產品中,國產及進口之巧克力、巧克力餅乾和餅乾分別13 件有8 件及33 件有4 件、14 件有13 件及33 件有13 件,和33 件有15 件及32 件有10 件的產品需強制標示出反式脂肪含量。另外,在國產及進口之巧克力、巧克力餅乾和餅乾分別有13 件有6 件及33 件有1 件、14 件有6 件及33 件有6 件,和33 件有5 件及32 件有5 件的產品高於泛美衛生組織(Pan American Health Organization; PAHO)建議反式脂肪佔總脂肪比例的5%。國產巧克力及餅乾產品中的飽和脂肪及反式脂肪呈現負相關,相關係數分別為-0.71(p<0.01)及-0.54(p<0.001),而國產巧克力餅乾則呈正相關,相關係數為0.58(p<0.05)。消費者購買市售巧克力、巧克力餅乾及餅乾產品時須多注意產品的營養標示。
A survey was conducted to assess levels of trans and saturated fat in three food categories: chocolate, chocolate cookies and cookies. A sampling of 158 domestic and imported products from each category was conducted at convenient stores, shopping malls and supermarkets in Taipei metropolitan area between June 2009 to March 2010. All information was obtained from Nutrition Facts label on product. According to Taiwan’s
Commercial Packaged Product Nutrition Labeling Norm, it can be labeled as zero when the percentage of trans fat in product under 0.3. The domestic and foreign samples must be labeled the content of trans fat include 8 out of 13 and 4 out of 33 of chocolate, 13 out of 14 and 13 out of 33 of chocolate cookies, and 15 out of 33 and 10 out of 32 of cookies, respectively. The domestic and foreign products contain trans fat above the Pan American Health Organization recommended level of 5% (trans fat of total fat) are 6 out of 13 and 1 out of 33 of chocolate, 6 out of 14 and 6 out of 33 of chocolate cookies , and 5 out of 33 and 5 out of 32 of cookies, respectively. Inverse correlations were found between the trans fat and the saturated fat content of domestic products of chocolate (r = -0.71, p<0.01) and cookies (r=-0.54, p<0.001), while domestic chocolate cookies was correlated (r = 0.58, p<0.05).Products that are lower in trans fat may be higher in saturated fat of domestic chocolate and cookies. Consumers need to pay more attention of Nutrition Facts label on product.
